Chili with Meat and Beans - 12/3/2015

  • [1] Pound lean meat (beef, chicken, turkey)
  • [3] Onions (medium)
  • [2] Heads of garlic (yes heads)
  • [1] Tablespoon italian seasoning
  • [3] Tablespoons of chili powder (or more to taste)
  • [1] Tablespoon of Garlic Salt
  • [1] Good grind of black pepper (to taste)
  • [2] Big cans of diced tomatoes
  • [2] Big cans of tomato sauce
  • [1] Large can of Kidney beans (or whatever you like), reserving 1/4 to 1/2 cup of liquid, draining the rest
  • [1/4] cup of red wine
  • [-] Heavy pot with a heavy lid, a cast iron dutch oven is perfect


  1. Brown meat until cooked through
  2. Add diced onions, and saute until they become translucent
  3. Add in spices and mix in
  4. Add diced garlic and saute until they become translucent
  5. Cook until onions and garlic are partially caramelized
  6. Remove some of the fat if desired
  7. Deglaze with wine, scraping to get all the solids off the bottom of the pan
  8. Add
  9. Add in reserved liquid from the beans, and the diced tomatoes and cook to reduce until thickened
  10. Add in beans
  11. Add in tomato sauce
  12. let simmer for an hour
  13. Adjust seasoning and spice to taste
  14. Simmer for the remaining time and then serve

Side Dish: Corn bread is a nice (our favorite is: krusteaz honey-cornbread-muffin-mix)

Toppings: tortilla strips crushed over to top before serving with a nice cheddar or queso fresco or sour cream is nice too
